Why: Goa’s loss is our grain, as Ashwem restaurant Gaia morphs into a catering service in Mumbai. Started by Shilarna (Le Cordon Bleu chef and owner of Ninja Sushi) and Christophe, Gaia’s menu features morel mushrooms, melon gazpacho, mini cheese burgers and Shilarna’s risotto version of her grandma’s Maharashtrian prawn khichdi.
