bpb (c)raves: Savitar black or white truffle oil, spotted at Indigo Deli, Palladium. Hard to find and wincingly expensive, we suggest you use this sparingly, to jazz up your mid-week dinner of mashed potatoes or elevate a green salad from mundane to magnificent.
Packed into a pretty glass bottle, it’s easy to forget that this fragrant stuff is made from fungus sniffed out by hogs, but there are a few things you need to remember: according to Shaheen Peerbhai, bpb’s resident food advisor, truffle oil should not be heated and is super strong. “So if your salad calls for six spoons of olive oil, substitute only one of those with the truffle version, or else it’ll get too overwhelming,” she warns.
Diehard fans can also use the oil to dip bread, or add a few drops to their soup. If you’re feeling really decadent, pour over scrambled eggs and pair with mimosas. May not work for a regular breakfast routine, but it’s definitely appropriate for a day when pigs fly!
