We dove into the Cocktail Fiesta at Konkan Café (Vivanta by Taj, Cuffe Parade), and resurfaced with this cocktail recipe for Saumdra Bhet.
45 ml Bacardi rum, 15 ml strawberry liqueur, 40 ml coconut water, 10 ml peach syrup, 120 ml orange juice, 280 ml pineapple juice, 10 ml lemon juice, passion fruit puree, ice, grated coconut and a slice of pineapple.
Pour rum and strawberry liqueur in a shaker filled with ice. Add coconut water, peach syrup, orange juice, pineapple juice and lemon juice and shake well. Strain and pour in a tall glass and put passion fruit puree to float on top. Garnish the drink with grated coconut and a slice of pineapple
