Recipe: Apple Pie From BBC

This recipe from J.W. Marriott’s (Juhu) pastry chef Savio Fernandes is as easy as… well, apple pie!

Ingredients

For the sweet paste

300 gms flour
150 gms cold butter
100 gms icing sugar
50 ml milk

For the filling

300gms apple slices
75 gms butter
100 gms brown sugar
50 gms raisins
50 gms almonds
100 gms sponge crumbs
5 gms cinnamon powder

Method

Cut the fat into the flour and sugar, play to make it resemble cake crumbs. Add in just enough milk to bind the contents together, chill for a couple of hours before use.

Line tart moulds and keep aside.

To prepare the filling, heat the butter and sugar in a pan, add the apple slices and allow it to cook on a low heat.

Add in the raisins, almonds, cinnamon powder and sponge crumbs, take it off the heat and cool it completely.

Fill the tart moulds with the filling, brush the sides of the tart with milk and cover the tart with another disc of sweet paste which has a small cavity in the center.

Milk wash, sprinkle granulated sugar and bake the tarts at 210°C for 20 minutes till golden brown.
