Malika-Rahat Khan, chef-extraordinaire, dishes on the most interesting flavours of the city.

Malika–Rahat Khan has a stellar pedigree – she studied at Le Cordon Bleu Culinary Institute in London, and worked at the Michelin starred restaurants L’Escargot (owned by Marco Pierre White, UK’s first celebrity chef) and the Orrery. She now runs Sugar Rush, whipping up the most amazing cupcakes, biscuits and other goodies in Mumbai.

Malika’s stint as 1st Commis and then Senior Chef De Partie at fancy French restaurants hasn’t eradicated her taste for chakli and Bombay duck. Back in Mumbai after seven years in England, Malika dishes on what she considers the five most interesting flavours in the city:

Soya Chakli at Camy Wafers:
Everyone who grew up here remembers Camy as the chips of choice for birthday parties. But Soya Chaklis are their best invention ever, and I have been known to go through an entire packet in one sitting!

Bombay Duck stuffed with Prawns at Casa Soul Fry: The only place I’ve ever eaten this brilliant starter is at Casa Soul Fry. Pure genius!

Cheese at Indigo Deli and Sante: Love it, love it, love it! I’m so glad I no longer have to ask my mum’s friend’s brother-in-law’s colleague to pick up a block of Gruyere from Dean and Deluca!

Hoegaarden Beer at Woodside Inn: My absolute favourite beer in the world! Woodside Inn serves it perfectly with a juicy slice of orange. It’s a brilliant end to a hard day at the office and the perfect beginning to the weekend!

Rose at Sugar Rush:
This is my favourite dessert flavour, and unfortunately I still haven’t found anyone who truly appreciates it the way I do! At Sugar Rush, I mix this loveliness with dark chocolate for butter biscuits and dark chocolate cupcakes.

I wanted customised cupcakes for Raakhi and I spoke to Malika. I told her about what I had in mind, and she seemed least interested. She said I should message her with the details and she will reply to me in an hour or two. I waited for an entire day, but no reply. I even sent her a text message, but no reply. Very very snooty people. I guess success has gone into their head.
